Morning Glory Muffins    Source: Goose Berry Patch "Comfort foods"
2 c. flour (1c. white 1c. wheat)
1 1/4 c. sugar ( alter the sugar amount. Use Agave, Honey or brown sugar)
2t. baking soda
2t. cinnamon
1/2 t. salt
2 c. carrots, peeled and grated
1 apple, cored, peeled, and grated
1/2 c. raisins optional
1/2 c. chopped pecans optional
1/2 c sweetened flaked coconut
3 eggs
1 c. oil (coconut oil)
2T. vanilla extract

mic together flour, sugar, baking soda, cinnamon, and salt in a large bowl. Stir in carrotts, apples, raisins, pecans and coconut; set aside. Bled together eggs, oil and vanilla, stir into flour mix. Mix well fill 14 paper lined muffin cups 2/3 full bake @ 350 degrees for 20 min.
Dust with powdered sugar and serve Enjoy!

Tripple Threat Chocolate Muffin
1 1/3 c. oats
3 egg whites
3/4 c unsweetened cocoa
1/2 c. unsweetened applesauce
1 t. vanilla extract
1/2 c. Greek yogurt (I like to use the Chobani pineapple and Cherry)
1/2 t. cream of tartar
1 1/2 t. baking powder
1 1/2 t. baking soda
1/4 t. salt
1 c. Hot water
1/2 c. or 3/4 c. sugar ( I use 1/2 c.)
1/2 c. semi sweet chocolate chips (use organic chips) I also use the mini's
Pre-heat oven 350 degrees
Mix the first 6 ingredients then add the last 5 ingredients. Hold on the choco chips. put 1/4 c. of the chips in the mix then save the rest for the top of the muffin.Pour into your lined muffin tins. 

Bake 10 min then pull out of the oven. add the rest of the 1/4 cup over the top of your muffins and bake another 2-5 min.

Let cool after baking. Place in a container in fridge. Eat cooled they are yummy! Kids Love them! Enjoy!!!

Breakfast Peaches and Cream Oatmeal
1/2 c. oats
1/4t. baking powder
1/4t. cinnamon
1/2t. vanilla extract
pinch of salt
1/2c. coconut milk or almond milk
1/2c. water
Peach peeled and cut into chunks
Bake in an oven safe bowl for 350 degrees for 30 min stir then drizzle with a little more coconut milk on top

Protein Cookie Dough
1 scoop chocolate protein powder
1 spoon scoop of peanut butter/almond butter
2 t. flax seed
3 T. oatmeal
honey

put all ingredients in am small mixing bowl use the honey to bind all ingredients. Mix SLOWLY with a fork mashing all ing. together. Be careful that the ingredients don't fall out of the bowl. I just squeezed enough honey to bind the ingredients. Roll into a ball, put in an air tight container. Keep cool in the fridge and Enjoy!
